Despite the growing interest in gluten-free bread, its production in Russia remains a niche market. According to Dmitry Semenov, President of the Russian Bakers’ Union, gluten-free products are in demand, but not yet ready for mass production—they are chosen by a specific category of consumers.
By comparison, the popularity of frozen bakery products in the country is growing rapidly: demand is twice as high as supply. Currently, their share in the total volume of production can reach up to 17%, and this figure increases every year.
Semi-finished products are becoming a trend because they are easy to store and transport, allowing stores to always offer fresh bread without the need for a full baking cycle.
