«Kolomensky» will open «Buterbrodika» café-bakeries

«Kolomensky» Bakery and Confectionery Holding is preparing to test a new café-bakery format under the «Buterbrodika» brand. These cafés will replace the previously launched «Goryachiy Buterbrod» bakeries. The first location is expected to open in July in St. Petersburg.

This was announced by CEO Dmitry Kozlov at the «Russian Retail Week» forum. Three bakeries are planned to launch within the year, and after six months, a decision will be made whether to further develop the network independently or to shift to franchising.

LLC «Buterbrodika» was registered in April 2025. Against the backdrop of the closure of the «Cheremushki» bakery chain, «Kolomensky» decided to update its concept. According to Kozlov, the concept has changed: «Goryachiy Buterbrod» operated as a to-go format with minimal seating, while the new model envisions a full-fledged café where visitors can sit and enjoy their meal.

This format remains popular in cities, making competition in this sector increasingly tough. Many brands are scaling through franchising – among them «Nastoyashchaya Pekarnya», SeDelice, «Khlebnik», as well as café-bakeries from Cofix, which has recently launched its own separate chain.
