Rich baked goods — now standardized: Rosstandart has approved a new GOST standard for rich bakery products.
The new interstate standard will come into force on September 1, 2027, and will also apply to frozen products.
According to the document, the GOST covers products made from wheat baking flour or a blend of rye and wheat baking flour. The sugar and/or fat content in such products must be at least 14% of the flour weight.
The standard also establishes product quality requirements, covering everything from appearance and crumb condition to taste, aroma, and texture.
At the same time, the GOST does not apply to: ➖baby food products ➖ring-shaped bakery products ➖rusks ➖fried products
The standard was developed by the Research Institute of the Baking Industry.
