Interesting news before the weekend: Spanish scientists made an alternative kefir from dried bread 🥛
In short: the researchers bought discarded wheat bread, dried it, crushed and sifted 🍞 The resulting mass (which included starch) was mixed with sterile water, pasterised, then cooled. Then researchers dded α-amylase and glucoamylase, which split starch into oligosaccharides and glucose.Then scientists added probiotic lactic acid bacteria and bifidobacteria. So it turned out to be a beverage similar to kefir.
