Scientists made alternative kefir from discarded bread

Interesting news before the weekend: Spanish scientists made an alternative kefir from dried bread 🥛

In short: the researchers bought discarded wheat bread, dried it, crushed and sifted 🍞 The resulting mass (which included starch) was mixed with sterile water, pasterised, then cooled. Then researchers dded α-amylase and glucoamylase, which split starch into oligosaccharides and glucose. Then scientists added probiotic lactic acid bacteria and bifidobacteria. So it turned out to be a beverage similar to kefir.
More information about the study can be found following the link 🔝

There is a possibility that the development of this research will give the world a new alternative to the classic kefir. A useful novelty for those who do not digest lactose 🍶

Do you see in the invention a prospect for waste-free production?
